Reliable tea production made possible only by a small tea farm

Mr. Morinaga Nori's tea garden is located at the highest reaches of the Warashina River, a tributary of the Abe River, at an elevation of 600 meters above sea level. There, he produces mountain tea with a rich flavor and aroma, which is possible only in areas high enough to snow during winter. The key to this “Kabusecha” is the timing at which he covers the tea, which is done shortly before the sprouts are picked to shade them from the light, and bring out their umami. It is a signature skill of master tea makers to match the climate and the movement of the buds to the right time. As Mr. Mori’s process is by hand, his product cannot be mass-produced, but his rare teas have many fans.
